Types of chocolate

There are many forms of chocolate but we will distinguish the most general types:


UNSWEETENED CHOCOLATE - also called plain, baking or bitter chocolate.

This is the refined chocolate liquor blended with chocolate butter. It contains almost 100% cocoa solids, about half of it might be cocoa butter. Unsweetened chocolate does not contain any other ingredients such as sugar, vanilla etc. that's why it has a strong and bitter taste and is not suitable for eating. It is used primarily as an ingredient in recipes.

Storage: Store unsweetened chocolate wrapped in a cool dry place with good air circulation.

If stored correctly, unsweetened chocolate will keep several years.


SEMISWEET and BITTERSWEET CHOCOLATE

A dark sweetened chocolate that does not contain any other ingredients except cocoa solids, sweeteners, vanilla and sometimes lecithin. The bittersweet chocolate must contain a minimum of 35% cocoa solids. The higher the content of chocolate liquor, the more rich and flavorful the chocolate is. Depending on the content proportion of sugar and cocoa solids you may find many variations of bittersweet chocolate such as extra-bittersweet, bittersweet, semi-sweet etc. However, because the quantity of sugar in this type of chocolate is not regulated, what one manufacturer calls bittersweet may be called semi-sweet by another manufacturer.

Bittersweet chocolate is frequently used for baking/cooking and is also eaten out of hand.

Storage: Store semi-sweet and bittersweet chocolate in a cool dry place with good air circulation. As chocolate is susceptible to odors try to keep it wrapped tight.

If stored correctly, semi-sweet and bittersweet chocolate will keep several years.


SWEET CHOCOLATE

A dark sweetened chocolate that contain at least 15% cocoa solids.

Sweet chocolate is similar to semi-sweet chocolate and it is sometimes almost impossible to distinguish between the flavor of sweet and semi-sweet chocolate.

Storage: Store sweet chocolate in a cool dry place with good air circulation.

As chocolate is susceptible to odors try to keep it wrapped tight.

If stored correctly, sweet chocolate will keep several years.


MILK CHOCOLATE

A sweet chocolate containing 10-20% cocoa solids and more than 12% milk solids and about 3.7% milk fats. Besides milk, sweeteners and cocoa solids (which includes cocoa and cocoa butter), milk chocolate contains vanilla and sometimes lecithin.

The finest brands contain a higher percentage of cocoa liquor, pure ingredients, and no artificial flavorings.

Storage: Store milk chocolate in a cool dry place with good air circulation.

As chocolate is susceptible to odors try to keep it wrapped tight.

If stored correctly, milk chocolate will keep up to a year.


WHITE CHOCOLATE

Because of the low content of cocoa liquor white chocolate cannot be called 'chocolate'. It is mostly made with cocoa butter, sweeteners, emulsifier, vanilla and sometimes other flavorings. It does not contain any non-fat ingredients from the cacao bean and therefore has an ivory color and a rich and creamy consistence. Do not buy white chocolate that contains vegetal fat instead of cocoa butter. White chocolate made with vegetable fat is white-colored.
